About Mae’s Bayou

Eunice Mae Parker was born onside of a road in Tickfaw, Louisiana. She grew up in Port Allen, Louisiana in an area known as Tombstone which sits right along the levee that separates the area from the Mississippi River and Baton Rouge, Louisiana. As a child she garnered the nickname Mae Mae and it stuck as an adult. Mae Mae spent time with her mom, grandmother, and aunts whom taught her how to cook authentic Louisiana cuisine at a young age.

"Unique flavor/taste, not what you’d expect from a hot sauce. Goes well with everything but is exceptional on fried foods, burgers and gravy & rice."

"Tried Mae’s Bayou hot sauce and immediately became addicted. It was blown away by how spicy and tasty it was. I found myself thinking about what foods I could use the hot sauce on. It can definitely go on and in everything for a pop of flavor. Would find myself dreaming of what food I could put it on. It goes on everything if you desire an incredible pop of flavor. My favorite 2 dishes so far to put Mae’s hot sauce on for a light snack is cucumbers with cherry tomatoes and wings when I need that extra kick."

  • Juleon L

"This is less of a sauce and more of a delicate balance between heavenly and hellish. The sweet smoothness takes my tickled tastebuds to heaven, but the fiery bite sends my tongue to hell (and back). I love and am addicted to this stuff!"

"I gave Mae’s Bayou Hot Sauce try and it didn’t disappoint. As a native of Louisiana we understand that flavor and versatility are key in enhancing any food. Mae’s blended perfectly with fish, chicken, and red beans. The fact that it was created by a Louisiana native is just a little Langniappe !!"
